Chickpea Cookie Dough


1 can chickpeas (skin removed)

1/4 cup peanut butter (or cashew butter)

1/4 cup reduced-sugar syrup

2 Tbsp protein pancake mix (I used Birchbenders)

1/4 tsp vanilla

1/4 tsp pink salt

1/3-1/2 cup chocolate chips (I used Enjoy Life)


Remove the skin from the chickpeas. Blend all the ingredients but the chocolate chips in a high speed blender or food processor. (I used a nutri-bullet and had to hand mix a couple times to make sure it was all smooth). Then add chocolate chips (as much you desire!) and mix to combine. Allow 1-2 hours in the refrigerator before devouring! (Store in the refrigerator)
